Adelaida's wines begin at the roots, pushing through the rocky limestone soils on the west side of Paso Robles on California's Central Coast. The winery, which originated in 1981, is located 14 miles east of the Pacific Ocean at an elevation of 1,800 feet in the Santa Lucia mountain chain.
The winery is a vineyard driven operation that considers itself a foremost proponent of the potential of west side Paso Robles. Adelaida's wild and rugged mountainside vineyards are loaded with limestone and calcareous shale. According to winemaker Terry Culton, "these characteristics cause the vines to strengthen. This results in added stress on the vines, which lowers the yields but produces more intensely flavored fruit". In keeping with the winery's sustainable philosophy, the vineyards are not tilled, encouraging native grasses, wild sage and rosemary to flourish between the rows.
Adelaida produces from its own Estate vineyards and a select group of contracted vineyards on the west side of Paso Robles. Amongst its holdings are the two principal estate properties, Viking Vineyard and HMR Vineyard. The mighty Viking Vineyard was planted in 1992 and is now producing great Cabernet Sauvignon and Syrah. The historic HMR Vineyard was pioneered by Dr. Stanley Hoffman in the early 60s. Devoted care and substantial investment have returned these 40+ year old vineyards to their former glory.

The Wine and Viticulture major, based on fundamental and applied sciences, modern agribusiness principles, and appropriate social sciences, encompasses grape cultivation, enology, and wine business - creating both an interesting and diverse undergraduate opportunity. The proposed curriculum fosters an academic alliance among production agriculture, food science, and agricultural business interests and provides an academic understanding of the "vine to glass" opportunity. Students will gain extensive hands-on experience in all aspects of the wine industry.
Cal Poly's College of Agriculture currently offers a diverse faculty and nearly 9,000 acres of farmland, including a 100-acre state-of-the-art commercial vineyard. This vineyard provides our students with an excellent opportunity to practice Cal Poly's trademark "Learn by Doing." Graduates of the Wine and Viticulture Major will be uniquely qualified to enter the wine industry.

Bill Wathen and Dick Doré have been making wine together since 1985, when they founded Foxen Winery & Vineyard at the historic Rancho Tinaquaic in northern Santa Barbara County. Since that time, their dedication has remained the same—the creation of very small-production, vineyard-designated wines using a "minimalist" approach to winemaking. The winery is named in memory of William Benjamin Foxen, an English sea captain and Dick's great-great grandfather, who came to Santa Barbara in the early 1800's. In 1837, this Santa Barbara County pioneer purchased the Rancho Tinaquaic, a Mexican Land Grant that originally totaled nearly 9000 acres and comprised most of what is now known as Foxen Canyon. Captain Foxen adopted the distinctive "anchor" as his ranch cattle brand, which has become a trademark of the winery. It is very fitting that FOXEN has made its home on the 2000-acre Rancho Tinaquaic, which remains in family hands.

Larner Vineyard is a small, family-run vineyard located at the heart of the best grape-growing region in Santa Barbara: Ballard Canyon in the Santa Ynez Valley. When the owners conceived of Roblar, they wanted it to be more than just another winery. They envisioned a place that would showcase their passion for authenticity and sustainable agricultural practices.They also wanted Roblar to showcase the delicious foods raised in Santa Barbara County, and to help put this amazing region on the map for cosmopolitan visitors. So we didn't just plant a vineyard, we also planted fruit trees, a vegetable garden, and a chicken coop. Our small flock of Southdown Babydoll sheep help mow the weeds, our hens provide the eggs for the kitchen, our produce goes directly from our field to your plate, accompanied, of course, by a bottle of Roblar wine. We didn't just build a tasting room and production facility. We built a large demonstration kitchen where you are invited to attend cooking demonstrations and wine and food pairings. We even added a gracious members' lounge where you can relax on leather sofas and watch the changing light as it caresses the fields. Much more than a winery, Roblar opens a window into a more relaxed way of life.

Saxum Vineyards is focused on producing Grenache, Syrah, and Mourvedre based blends fromthe Templeton Gap/Willow Creek area of Paso Robles.
We let our rocky calcareous soils, steep hillsides, sunny days, and cooling ocean breezes speak through our wines by keeping our yields low, picking the fruit at the peak of ripeness, and using a minimalist approach in the cellar. We respect our land and farm everything sustainably without chemical fertilizers, herbicides, or pesticides. Because our vine's roots penetrate deep through the fissures in the calcareous soil irrigation is rarely needed. Production is kept at 2200-2800 cases a year divided between five different cuvees, Broken Stones, James Berry Vineyard, Bone Rock, Booker Vineyards, and Heart Stone Vineyard.
